Antonius Caviar has not only been producing caviar, but primarily, Antonius Caviar has been breeding sturgeons for almost 30 years. Therefore as one of the best and biggest producer of caviar in the world, it offers you delicacy in the highest quality. Within 35 minutes from pulling the fish out of the water, in the highest production standards, caviar is extracted, sorted by size classes, salted and packed in the tins with no pasteurization. Warmia, the north-eastern part of Poland located in central Europe, is in a non-urbanised region where Antonius Caviar sturgeons mature. This region is referred to as the "green lungs of Poland" by the Nature 2000 network. It directly borders on a nature reserve "Las Warmiński" and the Napiwodzko-Ramucka Forest. The breeding ponds are supplied with the crystal clear water of the Łyna River. There are perfect thermal conditions necessary to breed healthy sturgeons of Siberian and Oscietra kinds. These perfect conditions translate into exceptional quality caviar. The cleanliness of the location affects the unique taste of the caviar.

    Tasting Culture

    TASTING CULTURE

    Caviar comes only from sturgeon fish. This royal delicacy has to be properly served and tasted. It is said that you don't eat caviar, you taste it.

    Caviar is very sensitive to temperature and should be properly chilled to preserve its freshness. You can keep caviar in the refrigerator but not in the freezer! Proper storage temperature is from -3° C to +3° C. It is very important to keep this range of temperature. You serve caviar in chilled glass dishes (bowls), preferably made of crystal. The bowl should be placed on crushed ice. This guarantees it's fresh flavour.

    For eating and serving caviar you use spoons made from mother of pearl, ivory or tortoiseshell. This delicacy is treated like royalty. Avoid using metal spoons (especially made of silver) as they can react with the caviar and impart a metallic taste.

    The tradition to taste caviar before buying it has led to a unique way of tasting it. You can place a little bit of caviar on the back of your hand between your thumb and your index finger. Then look at the roe and then taste it. Spread it on the palate. That's how its tasted by the best restaurant chefs.

    The traditional way of eating caviar is with blinis pancake. It can be served on warm toasts or it is usually served on small sandwiches. Something everyone should be aware of - don't spread caviar!

    At parties it is served in an egg, it is sunk onto the egg yolk. Caviar is also served inside oysters like a jewel. The whole dish is served on ice crystals with lemon.

    Caviar is inherently associated with alcohol. Good quality champagne is often a good match for sturgeon roe. It is also often served with white wine. In traditional Russian cuisine, caviar is served with pure vodka.

    The Farm uses roe of Russian sturgeon (Acipenser gueldenstaedtii) and Siberian sturgeon (Acipenser baerii) to produce caviar. The process of selecting sturgeon females is extremely rigorous and requires precise knowledge. Females reach reproductive age after 7 years. Roe for caviar production is extracted only from mature females aged 8-10 years. We make sure that our sturgeons are in perfect health as this, together with the uniqueness of the place they are bred in, influences the quality of caviar.
